Dedication, time-tested recipes and 100% Canadian beef. Who is the Big Chief? Originally a sausage producer and delicatessen, William Klein founded Alberta Fancy Sausage Ltd. in 1971. As a master butcher, William brought skills honed in Germany to Calgary and customers at the shop would ask for “The Big Chief” when referring to him. When the switch was made from delicatessen to beef jerky manufacturer, the new brand “Big Chief” evolved.
