The Divellec is one of the most beautiful new restaurants to open in Paris for a very longtime. The original Le Divellec restaurant, overlooking the Esplanade des Invalides, was launched in 1983 by chef and keen fisherman Jacques Le Divellec, and soon became restaurant of choice for politicians, diplomats, captains of industry, the press – welcoming the likes of François Mitterrand, the Chiracs, the Sarkozys and the Clintons. In 2013, chef Le Divellec – aged 80 – hoisted the “gone fishing” sign and retired. Pacaud is striking out in new waters, keeping the history of the iconic maison alive, but evolving it with his own daring and deliciously avant-garde ideas. In the spacious state-of-the-art below-stairs kitchens, Mathieu and his father Bernard – whose L’Ambroisie restaurant in Places des Vosges has three Michelin stars – are two generations joined by their common culinary passion. Studio KO’s interior design references 30 years of discreet dining of the rich and famous, with the Left Bank of the 1960s and 1970s felt in the velvet banquettes. To the left of the vestibule is a tropical-plant-filled winter garden, to the right a curved pink marble bar – the beating heart of the restaurant. The legendary Parisian restaurant “Le Divellec” reopened with a new concept and design in September 2016. Losing the “le” and with Michelin-starred chef Mathieu Pacaud and his associates Isabelle Saglio and Philippe Grach, they will continue its reputation of being the first restaurant of choice for all politicians, diplomats and industry leaders worldwide like François Mitterrand, the Chiracs, the Sarkozys and the Clintons. Divellec, now double the size of the original restaurant, still retains its aristocratic aura and was recognized by the Michelin Guide in February 2017 with One Michelin Star.
