Zim Braai, Inspired by Africa, crafted in Bournemouth, 2018 Drawing from Southern Africa with heavy influences from Zimbabwe, Malawi and South Africa as well as the south eastern islands of Mauritius, the Seychelles, Madagascar and the ”Spice Island” of Zanzibar. The African continent and and Southern Africa in particular has a vibrant and diverse food and culture. We plan to bring African food to the UK marketplace in a stylish yet traditional way using time honoured cooking methods, all wrapped up in a striking and subtle design and a vibrant atmosphere, delivered with a European service model. THE BRAAI Using the traditional wood-charcoal Braai as the main focal point of the menu and kitchen it provides versatility to cook a wide range of grilled meats and fish. THE POTJIE The traditional cast iron Potjies allow for traditional stews and Cape Malay curries to be cooked and presented in a unique and controlled way. FOOD TYPE The Braai and the Potjie are the focal points of African cuisine with the former allowing high quality healthy protein meats and fish and the latter providing heathy hearty stews and Cape Malay curries. This then blended with traditional sides and vibrant and superfood salads will give us the ability to cater for the whole market place with on trend healthy and “good for you food”.
