As a gift for his pregnant wife, the owner invents fettuccine Alfredo, fresh egg pasta with butter and Parmesan cheese. A dish that gains an international reputation in a very short time. In Rome the “Dolce Vita” was flowering and thanks to the star system the fettuccine Alfredo became the icon of Italian cuisine. Indeed up to today this dish remains the most famous and replicated Italian recipe in the world. Over a hundred years have passed since those days, and there have been so many requests to open a "Fettuccine Alfredo" restaurant abroad, able to carry along the tradition of true fettuccine Alfredo. For this reason, the owners reconsidered the business of their working activity creating a system capable of standardizing product and service, and setting up an easy replicable format.
